These tahini chocolate chip cookies get their rich, nutty flavor from tahini, a creamy paste made from ground sesame seeds. Its subtle savory note balances the sweetness of the chocolate beautifully.

I already have more chocolate chip cookie recipes than I can count, but every now and then, one comes along that feels a little different in the best way. This tahini chocolate chip cookie recipe is exactly that.

At first glance, they look like classic chocolate chip cookies, with golden edges, soft centers, and plenty of chocolate. But take a bite, and there’s something else going on. Tahini adds a subtle, nutty depth of flavor, while a touch of toasted sesame oil brings out its nuttiness without overpowering the chocolate. They’re familiar enough to satisfy a chocolate chip cookie craving, but different enough to feel special.

This recipe is adapted from Danielle Oron’s Modern Israeli Cooking.

What You’ll Need To Make Tahini Chocolate Chip Cookies

tahini chocolate chip cookie ingredients
  • Unsalted Butter, Tahini, and Toasted Sesame Oil: All three add richness to the cookies. Tahini is a creamy paste made from ground sesame seeds; be sure to stir it well before measuring, as the oil tends to separate. For the sesame oil, use the toasted variety, which is darker and has a stronger sesame flavor than regular sesame oil. A little goes a long way, so you only need ½ teaspoon.
  • Granulated and Light Brown Sugar: Work together to create crisp edges, soft, chewy centers, and a hint of caramel flavor.
  • Egg and Egg Yolk: Bind the dough, provide structure, and add richness.
  • Vanilla Extract: Rounds out the flavors and complements the chocolate and sesame.
  • Salt and Flaky Sea Salt: Salt balances the sweetness and enhances the tahini and chocolate flavors, while optional flaky sea salt adds a finishing touch and extra salty contrast.
  • Baking Soda and Baking Powder: Work together to create crisp, golden edges while keeping the centers thick and soft.
  • All-Purpose Flour: Provides structure. For accuracy, spoon it into a measuring cup and level it off.
  • Chocolate Chips or Chunks: Add rich chocolate flavor that balances the nutty tahini.

How to Make Tahini Chocolate Chip Cookies

Make and chill the dough: Beat the butter, tahini, sesame oil, and sugars until light and fluffy, then mix in the egg, egg yolk, and vanilla.

Whisk together the dry ingredients, then mix them into the wet ingredients just until combined. Fold in the chocolate chips, then cover and refrigerate for at least 4 hours, preferably overnight. The long chill allows the flour to absorb moisture, helps the cookies bake up thick and chewy, and gives the tahini flavor time to develop.

Bake the cookies: Bake one sheet at a time until the cookies are lightly golden around the edges but still look a little underdone in the center. That’s exactly what you want—they’ll finish setting on the baking sheet as they cool.

Sprinkle with flaky salt, if using, while they’re still warm, then transfer to a wire rack after a few minutes.

Storage & Freezing

Store the cookies in an airtight container at room temperature for up to 3 days. They’re best the day they’re baked, but stay soft and chewy thanks to the tahini. If you like a just-baked texture, you can warm them briefly in the microwave for a few seconds before serving.

To freeze the baked cookies, let them cool completely, then store in an airtight container or freezer bag for up to 2 months. Thaw at room temperature or warm gently in the oven.

To freeze the cookie dough, scoop into balls and place on a parchment-lined baking sheet. Freeze until firm, about one hour, then transfer to a freezer bag and freeze for up to 3 months. Bake straight from frozen, adding 1 to 2 minutes to the baking time (no need to thaw).

Tahini Chocolate Chip Cookies

Adapted from Modern Israeli Cooking by Danielle Oron
This tahini chocolate chip cookie recipe puts a grown-up spin on a childhood favorite (but kids will love them, too)!
Servings: 24 cookies
Prep Time: 20 minutes
Cook Time: 40 minutes
Total Time: 1 hour , plus at least 4 hours to chill the dough

Ingredients

  • ½ cup (1 stick) unsalted butter, at room temperature
  • ½ cup well-stirred tahini
  • ½ teaspoon toasted (Asian) sesame oil
  • ½ cup granulated sugar
  • ½ cup (packed) light brown sugar
  • 1 large egg
  • 1 large egg yolk
  • 1 teaspoon vanilla extract
  • 1⅓ cups all-purpose flour, spooned into measuring cup and leveled-off
  • 1 teaspoon salt
  • ¾ teaspoon baking soda
  • ¼ teaspoon baking powder
  • 1¾ cups (10.5 oz) semisweet or bittersweet chocolate chips or chunks
  • Flaky sea salt, for sprinkling (optional)

Instructions

  • In the bowl of a stand mixer fitted with the paddle attachment (or using a hand mixer), beat the butter, tahini, sesame oil, granulated sugar, and brown sugar on medium speed until light and fluffy, 2 to 3 minutes. Scrape down the sides of the bowl as necessary.
  • Add the egg, egg yolk, and vanilla, and beat until smooth and well incorporated, about 1 minute more.
  • In a separate bowl, whisk together the flour, salt, baking soda, and baking powder.
  • Add the dry ingredients to the wet ingredients and mix on low speed until just combined. With the mixer on low, stir in the chocolate chips.
  • Cover the dough and refrigerate for at least 4 hours, preferably overnight.
  • Preheat the oven to 350°F (175°C) and set an oven rack in the middle position. Line a baking sheet with parchment paper.
  • Scoop the dough into 2-tablespoon portions and roll into balls. Place on the prepared baking sheet about 3 in (7.5 cm) apart.
  • Bake for 12 to 14 minutes, until the cookies are golden around the edges but still pale in the center. Keep the remaining dough in the fridge between batches.
  • Remove from the oven, sprinkle lightly with flaky salt, if using, and let cool on the baking sheet for a few minutes before transferring to a rack to finish cooling. Repeat with the remaining dough.

These cookies were stellar. Echoing your sentiment fully on a chocolate chip cookie “compendium” definitely having room for this iteration. The Tahini was magic. I’m a little bit piggish when it comes to cookie size, and I crafted “20” balls of dough @ 49 g. per. I don’t know if insulated cookie sheets exist any longer, but years ago, there was one called “Cushion Aire”. These type of sheets keep cookies from getting too brown on the bottom. I lined my insulated sheet with parchment and baked them your way. YUMMY. But I also did something rogue. I used the pure convection setting of our oven and set to only 300°. I baked for 20 minutes, turned off the oven and allowed the cookies to dwell until room temperature, so yes….a few hours. Had these last night, and cannot rave enough about pure sesame crunch, through and through. Enough fat that these were not hard….just shattering sesame WOW in the mouth. Thank you Jenn for sharing.

So delicious! Easy to follow recipe and they turned out fantastically without any changes. Such a deep flavor that is more complex than any normal chocolate chip cookie, but still close enough to give you all the comfort of a traditional recipe. Perfect amount of sweetness. Another winner….I expect nothing less from all of your recipes! 😀 Thank you!
