Jen, I think I’m in big trouble. I made this to bring to friends tomorrow in a caprese salad, but each time I walk by the kitchen, I grab one or two. May not be any left. Once again, you’ve hit it out of the park. 5 stars plus.
I roast cherry/roma/tomatoes all the time. When I roast I add a little brown sugar and some thyme. When the mixture has cooled, I put into blender to make a sauce for pasta. My Grandchildren love it! I serve with fresh basil!
